Do you recall Carlin Sunday? Carlins feel to have dropped out of favour presently. But when I was a lad in the northeast of England, we utilised to have Carlin peas also referred to as Maple peas, Black peas or Pigeon peas when a 12 months on the Sunday before Palm Sunday. 1lb Carlins

2 oz butter

A great pinch of salt

Vinegar

Approach.

Location the Carlins in a bowl, protect with h2o, insert pinch of salt and soak overnight.

Following soaking, drain and area in a pan of boiling h2o for 20 minutes. (Boil for longer if you like them softer)

Warmth up the butter in a frying pan, drain peas, insert to the pan and fry for 2 to 3 minutes.

Provide hot with salt, pepper and vinegar.

Or if you would like you can provide them hot, sprinkled with brown sugar and a great splash of rum.

The following carlin recipe has nothing in anyway to do with my mum, but I noticed it on an Online web-site belonging to the ‘Irish Seed Savers Association’ and I assumed it would be intriguing to check out. The recipe was despatched in to the web-site by Lorraine Marshall and I have reproduced it beneath.

Carlin Pea Fritters

4ozs Dried complete Carlin peas

1/2 tablespoon olive oil

1 egg

2ozs self-boosting wholewheat flour

1/8 pt(75ml) milk ( I use soya milk)

sea salt

freshly floor black pepper

oil for shallow frying

Cover peas with boiling h2o and leave them to soak for numerous several hours, then drain and rinse them. Set into a saucepan with more h2o and simmer right up until they are tender- about 45 mins.

Drain them and mash them (I come across that the carlin peas cook erratically some are continue to hardish, so I get my husband to mash them with a fork!).

Insert oil, egg, flour and milk moreover salt and pepper, mix effectively.

Fry in a minor oil in desert spoonful sizes right up until crisp and brown on equally sides. Drain effectively on kitchen paper.
